    Beetroot

Beetroot is the edible root of the Beta vulgaris plant. Also known as table beet, garden beet and beet, in addition to the root, the plant also grows edible green leaves which can be consumed boiled or steamed.

The deep red root is the most commonly consumed part of the plant. It can be boiled, roasted, or grilled and is popularly used in salads. It can also be shredded and juiced to create a tasty thirst quencher. Cooked beetroot has a soft texture and tastes mildly sweet.

The deep red color of the beetroot is caused by the chemical, Betanin which is industrially used as a food colorant to enhance the color of tomato paste, ice cream, jelly and sweets.

A serving of beetroot is rich in dietary fibre and folate. Several studies have identified it to have heart friendly effects, particularly related to lowering blood pressure. These effects are believed to be caused by natural nitrates found in beetroot.
