    Brinjal

                   Brinjal, also known as eggplant or aubergine, belongs to the Solanaceae family. The fruit is technically a berry and has a flesh-like texture and small, edible seeds. In a culinary sense brinjal is considered a vegetable. Different varieties of the plant produce fruit of different colors and shapes. The variety that is most common to Sri Lanka has a  shiny, smooth, and deeply purple surface with a firm yet yielding consistency.

                   Brinjals are high in fiber and manganese. Additionally, they are also a good source of folate,  and vitamin K while being low in fat and calories.

                   Brinjals can be hollowed and stuffed, grilled, fried, boiled, or stewed. They become soft and give out a meaty flavor when cooked. Many recipes recommend salting, rinsing and draining of the sliced vegetable prior to cooking. This helps to soften the consistency and reduces the amount of fat absorbed while cooking.
