    Gherkin

    Gherkin is a variety of small cucumber commonly used for pickling. It is the fruit of the plant Cucumis Sativus. In Sri Lanka gherkins are commercially cultivated in the dry zone.

    The gherkin plant is a creeping vine with huge leaves, that bears cylindrical fruits with tapered ends. An average gherkin is 1 to 3 inches long with a diameter of 2 to 4 inches. In a botanical sense gherkins are considered a fruit, but are treated and perceived as a vegetable in the culinary world.

    Approximately 90% of the gherkin consists of water and hence it is very low in calories. One average gherkin contains only 5 calories making it a popular choice for anyone who wants to keep the extra pounds away.

    The commonest method of gherkin preparation is to pickle it in vinegar. They are served cold as cooking rapidly destroys the flavor. Pickled gherkins make a great accompaniment and are commonly used in sandwiches and burgers. The crunchy texture also makes them an excellent addition to salads.
