    Tomato

                   The Lycopersicon esculentum, more commonly known as tomato, is an important cash crop for the Sri Lankan farmer. Originating in South America, it is available in many local varieties, ranging from bright red to orange in color. Depending on the variety, the fruits may be hard or soft or have a round or flattened shape.  These are best grown from mid-March to late August, in mineral soil with a high concentration of water.

                   Tomatoes contain a wide variety of vitamins and minerals which contribute to a well-balanced diet. A 100 gm serving of the fruit contains 1100 IU of Vitamin A, 0.2 grams of Vitamin B, and 23 grams of Vitamin C. Protein, carbohydrates, and amino acids are also plentiful in the fruit.

                   Tomatoes are commonly eaten raw. While botanically a fruit, it is also considered a vegetable in a culinary sense.  Tomatoes can be used in soups, sauces and salads, or blended into beverages or cocktails. It is a primary ingredient in many Sri Lankan curries, and is sometimes paired with fish, prawns, or okra.
