    Carrot is the edible taproot of the Daucus carota plant.  They are usually orange in color but red, white, purple and yellow varieties exist. The roots are the most commonly consumed part of the plant, but the greens are also edible.  The length of a carrot can range from two inches to three feet, and the diameter from half an inch to two inches. In Sri Lanka, this plant is grown in high altitude zones throughout the year.

    Carrots are packed with an array of anti-oxidant nutrients including β carotene,  and thus have heart friendly and cancer fighting properties. β carotene is responsible for the characteristic bright orange color of the carrot. This is metabolized into Vitamin A in the human body, making them a rich source of Vitamin A. 

    This versatile vegetable is used in a wide array of dishes including salads, soups, curries, and desserts.  When consumed raw, they have a sweet taste, and a crisp, crunchy texture.  Only 3% of B Carotene in the carrot is released during digestion when eaten raw,  and the release can be improved by pulping, cooking, and adding cooking oil before consumption.
